sort the items in the portfolio view

Hello, my problem is that I want in the portfolio view articles appear sorted in the order I give in joomla. I also need the categories that are filterable also appear neat. How I can get it?
Another question: how I can remove the filter "all" in portfolio?

Hi, There is an option to change the item ordering in the module backend, have you tried it?

Yes I've tried from there, if I choose "ordering" are ordered but there are some items that do, and if I choose "default" is not manually sorted
